How it is made

Fresh chillies, fruit and herbs are chopped and packed with salt. Natural lactic fermentation then builds slowly until the sauce settles between pH 3.4 and 3.6, well under the 4.6 that food safety asks for. The tang comes from the ferment, not from a flavour mix.

Every element is batch produced to the same spec, so the heat and the flavour stay where they should, bottle to bottle. Shake well before use and refrigerate after opening.
